One thing to note is that while you can save iOS 5.0 SHSH blobs now (only if you are currently running it on your iOS device), you wont be able to downgrade to the stock version (of iOS 5.0) yet once you have updated to iOS 5.0.1 or later. This is because of certain new checks used by Apple starting from iOS 5.0 to ensure people stick to the latest version of iOS
You can however still go back to custom iOS 5.0 IPSW which is created using iFaith 1.4.1 with the SHSH blobs incorporated for the firmware you are downgrading to, as explained by iH8sn0w in the video
